Menu Plan

Isn't that the perfect design for the month of love? Total cuteness!

I have been making extras of most of my dinner to keep in the freezer. However, before I can get them to the freezer they are used up for lunches for Jason and/or the boys. I am going to be making some more apple-zucchini muffins this week - it's been requested by a certain 4 year old. How can you say "no" to that? Especially when he calls them "sneaky muffins" since the zucchini is in the muffin but can't be tasted? Too funny. I'm also going to make some pizza dough! Fun times!

Here's the recipes I will be using this week:

Santa Fe Chicken Tortellini Casserole (from Betty Crocker Cookbook (Bridal Edition) (Betty Crocker Books))

Have a great week!!

This Week's Eats

Welcome to a week of partying and fasting!? Yes, we are entering the week where the carnival season ends, the season of Lent begins, and Valentine's day. I hope no one went crazy and gave up sweets! ;) Anyway, you will notice that our menus will have a lot more seafood/vegetarian items due to our Fridays of abstaining from meat. Now, on to the menu!

DIY Ornaments {Pinterest Projects}

I finally got around to getting a few projects done that I had pinned a while back. Yay! I'm really pleased with how they turned out, too. What do you think?

Ornament #1: DIY Sheet Music Ornament (inspired by I Heart Nap Time):

Festive, eh? I had a bunch of clear plastic balls that I was going to use last year for another project that never worked out. So, luckily, I only bought the card stock stickers (I used one for a the tag) and a piece of scrapbook paper (which had Christmas carols on it!) from Hobby Lobby. Yay me!

Ornament #2 and #3: Baby Beanie and Wrist Band Ornaments (original idea pinned here):

SO CUTE!!!! Andrew's beanie and band are on the left. Alex's are on the right. I LOVE how they turned out. These are regular size ornaments. I just used the end of a paint brush to get the little hats in there. I love them. I just tied on some ribbon to hang them and done!

I originally had these in their scrapbooks that documented their first year. But, they were in a box that I just happened to be able to get to since the boys rooms are in the process of a makeover (much more on that to come). Granted, these will only be out at Christmas, but better than in some random box, right? And, again, SO CUTE!!

I have a few more projects that I am working on, so stay tuned for another update on those.

In the mean time, how about some amazing cookies? YUM!

I know, right?! And, aren't my little elves the cutest?! If you want to follow all of our Christmas fun on Instagram, here ya go! Click here! Yes, it is private, so you will have to wait until I allow you. I had some spammer the other week. Lame.  Get a life, spammer!

Have a great week!!

Tackling the To-Do List

GIVEAWAY GOING ON NOW THROUGH JUNE 30TH! CLICK HERE TO ENTER!!

I am getting some things done this weekend finally. They are little things that I could have taken care of, but between getting home from Tennessee and working Vacation Bible School this past week, it's been a bit crazy around here.

Remember how I wrote about making a to-do list board on Pinterest? Well, I have "scratched" some things off and have added some new items. Yay!

Friday, after the boys woke up from their naps, I had paint, paper, and baby wipes set out for them. We made Father's Day cards! Andrew loved it - Alex...not so much. But, we got them done and Jason LOVED them!!

Aren't they cute!? We used regular craft paint and made sure the baby wipe were handy. Black on their arm and gray on their hands to make the golf club. Yellow to make a golf ball. Well, white wasn't exactly going to show up on white paper, right? And - LOL - I was trying to hurry (as the garage door was coming up signaling Jason was home) and write the message...and messed up Alex's. It is supposed to say FORE not for. Ugh, oh well. He loved it and the little guys were so proud of their work. :)

While this was all going on, I  had mixed up some chocolate chip oatmeal cookie dough and made a cookie cake for Jason. I had a lot of dough left so I just made a batch for the freezer. This is the BEST RECIPE ever! They are perfectly moist and soooo yummy!

After dinner, we had movie night and watched the perfect Father's Day movie together - Finding Nemo! I love that movie. It soooo cute. And Dory speaking whale...um the best part! LOL

Once those 2 little ones were done with their movie and ready for bed, I headed back into the kitchen to attempt the 4-Ingredient Bread recipe I found on Pinterest. I admit, I really was not sure this was going to turn out well. But it is awesome. I just mixed up the ingredients and let it rise overnight. Baked it this morning! YUMMY!

Light and fluffy!

Next on the To-Do List:
Figure out how to create a fold-out entertaining station for outside

How is your weekend going? What's on your to do list today?

Freezer Cooking Extravaganza!

I have been following Money Saving Mom's freezer cooking challenge, and this week I have filled our freezer with some very yummy dinners and a couple of breakfasts. It all might sound like a lot, but it was actually really easy to get done - especially with the way she has everything listed and planned out.

On the left side: 2 bags of Italian Chicken, 2 rounds of homemade pizza dough, and 2 bags of BBQ meatballs
On the right side:2 lasagna casseroles, 4 pans of baked oatmeal, and 2 chicken broccoli rice casseroles

YUMMY!

Glad to be home and getting things back in order here :)

Manic Mondays

Monday afternoon was crazy. Jason went to the doctor in the morning only to come home at lunchtime with a bag of meds for a chest/sinus infection. Alex had a fever roller coaster going anywhere and everywhere between 99.9 and 102.5. So, I ended up taking him to the doctor later that afternoon (thankfully, Jason was home to let Andrew - who is perfectly fine - take his nap) to only have him come home with medicine for a nasty ear infection. I'm stocking up on as much vitamin c as possible. Moms are not allowed to get sick. The world doesn't stop for us...

BUT! In the midst of the madness, Andrew was a HUGE help by being my assistant baker. Love it! We actually got a LOT done! I am following Money Saving Mom's freezer cooking plan for this month a bit and adding a few of my own items here and there.

Andrew and I made homemade baking mix, pancakes, banana bread, 2 rounds raisin-walnut bread, and 2 pans of baked oatmeal. YUM!

One round of raisin-walnut bread ready for the oven!

Update: Alex is feeling much better. No fever and acting himself again. Jason is happy to have his medicine and went back to work today feeling fine. Andrew and I are still in the clear - keeping our fingers crossed!
