Italian Spinach Meatloaf Recipe

Italian Spinach Meatloaf
1 pound ground beef
1/2 bag fresh baby spinach
2 pieces of honey wheat bread
1 egg
1 clove garlic, minced
1 tbsp dried parsley
1/2 mozzarella

1.  Preheat oven to 400
2. Wet bread then mash it up. 
3. Add to bowl to combine with ground beef, spinach, egg, garlic, and cheese.
4. Place mixture in favorite loaf pan (non-stick or greased) and cook for 50 minutes. 

When the timer goes off, turn off oven and keep meatloaf inside until sides are finished. I served brown rice (the Minute Brown Rice - takes about 8 minutes to make) and fresh carrot sticks.
